if your not planning for 2 get yourself a pathfinder
enough horspower to have fun on sand, verrrrrry confort and stable on highway
just lift it up a little, bigger tires and your ready

what you say is OK, but I would replace Pathfinder by Xterra, as
- it is cheaper,
- the bumpers are more suitable for off-road as they are not painted,
- the stock version is already a bit lifted using Bilstein shocks,
- there are more and easier after-market parts for modding available.
but this is only me thinking
